Baigetsu had taken two of the Suwa area's most historically representative ingredients, agar and salt, and combined them into a dreamy sweet -Shio Yokan. A firm jelly-like cake made of agar, their yokan is made following the traditional recipe to the letter.
This shop doesn't only sell Japanese confectionary, though. One of their specialties is Italian gelato prepared with fresh in-season products. Besides the timeless classics, they also offer unique Japanese-inspired flavors.
